Today's short blog post is about where I am now, my continued weight loss adventure, some insight and a recipe!

At my heaviest weight, I was 215 pounds and being 5 foot 1 (on a good day) I'm surprised I didn't develop diabetes or have any other serious health problems. But, that was then, now I weigh in between 125 - 130.
I must admit, I have been eating like a junkie as of late. I have been shoving my favorite junk foods in my mouth, mostly popcorn, dark chocolate, French pastries, such as chocolate eclairs and fruit tarts, other homemade sweets and of course French bread with big helping of butter before eat bite.
Yes, I did gain weight, yet what is worse is that I disconnected from body. I do not want to use medication as an excuse, however I have started two new medications, which weight gain is a side effect. The good news is the medication is helping, the bad news is that I haven't had the motivation to do anything. I do not feel good in my skin, and worse, my body stopped talking to me. This is what I mean by being disconnected to my body.
I know it sounds strange, but there was this little voice in my head that would say, 'Hey, you know what would be awesome right now, some squats!!' and out the door I would go! Therefore, after some reflection and with the help of my doctors, I have restarted the induction phase of the Atkins diet and I am slowly weening myself off my prescription meds, my hope is that my body will start speaking to me again and she will!
By the way, in case you didn't know, I lost a considerate amount of weight by doing Atkins. It is what worked for me.
Today's recipe is one of my FAVORITES!
Low carb tacos!!
Can be made with chicken breast or ground beef.
half a pound of ground beef
red, yellow and bell peppers
oil -- I use either olive or veggie
1 medium onion
2-3 cloves of garlic
half a medium tomato and tomato paste/sauce
salt and pepper
Directions: First, brown your ground beef for about 5 minutes. While it is browning, I start chopping the peppers, garlic and onion, I cut them in slivers, however you cut them as you please. As for the tomato, cut in half. Half of it will be placed in the pan, the other half will be saved for the salad. Then add the garlic and onion to the pan and mix until they meld well!
Next, add your spices. I keep it simple, just salt and pepper and CUMIN, it is the spice that makes the recipe! Mix it around, I add a lot of cumin. Trust me, it is soooooo good!
Then I add in the tomato sauce... You want it to be saucy, but not soupy. A small jar or box will do finely. Once it is nicely mixed and smells like heaven, throw in the peppers, set on a high heat and mix, mix, mix! It should take only 2-3 minutes, then mix in half of the tomato, turn off the heat and allow it to simmer.
While it is simmering, prepare your plate. I load half my plate with a green salad, the other half of the tomato and add a spoonful of sour cream to each side, then I cover in cheddar cheese. Then serve the beef, which I also top off with cheddar cheese and VIOLA! I'm in low-carb, fat girl heaven!!! ENJOY!
