Soupe aux Potrion
Since the weather has turned cold, my favorite soups to make,
during this time of year, is either pumpkin or butternut squash.
There is hardly anything to it,
what takes the longest is cutting the pumpkin or butternut squash into bite size pieces.
There are 3 main ingredients in French cooking:
1. butter 2. cream 3. or both!
For this recipe, I made pumpkin soup and used both butter and cream,
and then topped it with roquefort, just for good measure!
Pumpkin Soup for the Soul!
Onion (I used about a 4th of a medium sized onion)
1 clove of garlic
butter - about 2-4 pats worth
depending on the size of the pumpkin
(heavy) whipping cream
salt and pepper
blender or hand blender
Optional: a chicken bouillon cube and cheese on top!
I used roquefort, however use your favorite and just a sprinkle.
In the past, I have also added sliced almonds on top as well.
